Legendary fortified wine from Andalucía (south of Spain), made for centuries. From dry to sweet: Fino and Manzanilla, Amontillado, Palo Cortado, Oloroso, Pedro Ximenez and Cream. EN RAMA: unfiltered sherry. Made for premium Fino and Manzanilla SOLERA: every year 1/3 of the oldest blend is bottled and the winemaker add the new vintage into the barrels. This is called a solera system. It is worth a try.
A superb Sweet Oloroso or Cream Sherry.
An elegant blend of Palomino and Pedro Ximénez before entering the Criaderas y Soleras system for ageing through oxidation in oak casks. Aged for at least six years.
Tasting notes: Sweet Oloroso. Mahogany colour and aromas of dried nuts with a hint of raisins and brown sugar. Smooth, velvety palate with warm alcohol flavours and a long finish. Gold Medal (San Francisco International Wine Competition 2015)
It can be consumed very cold by itself and with desserts, or on ice as a refreshing drink.
This is a medium sweet Sherry from Williams and Humbert, made from a combination of Palomino and Pedro Ximenez grapes. Aged for at least 6 years, it is slightly sweetened during this process making it more versatile in that it can be matched with food rather than being enjoyed purely as a drink - light pasta dishes will work very well.
Described as being half way between an Oloroso and an Amontillado, the Dos Cortados Solera from Williams and Humbert is aged for an average of 20 years producing a deep and rich flavour, balanced with the perfect level of acidity. This will be delicious with a variety of cheeses such as Cheddar and Gruyere, or equally so on its own after a meal.
