With all the hype attributed to Bordeaux, Burgundy still remains the most complex and intellectual of France's dreamland of wine-making. What is lacked in varietal blending, as only two grapes are used - Pinot and Chardonnay, is made up for by the 'terroir' - the expression of geological and climatic conditions, which can vary so dramatically over as little as ten or twenty yards within a single vineyard.
The weather in 2014 was slightly unpredictable with a warm and slightly humid start to the year, this called for an early harvest at the beginning of September. Made with 100% Chardonnay grapes, the Chablis from Domaine Bernard Defaix is known for its freshness and powerful palate. Notes of apple and citrus - grapefruit and lemon, this is the perfect wine to serve alongside some fresh seafood.
Made from the domaines oldest vines (planted 1955) which benefit from perfect South/South-East sun exposure. This cuvée is partially fermented in oak barrels & aged for 12 months on fine lees with regular "batonnage". After tasting, this is blended with rest of the cuvée aged in stainless steel tanks. The final blend is bottled 18 months after the harvest to emphasise the Côte de Lechets power. The bouquet marries floral elegance with the mineral intensity of the terroir. The palate is characterised by fullness, richness and length.
