Single Pot Still
Single pot still whiskey must be distilled in a certain type of still called pot stills. The mash always consists of both malted and unmalted barley, which results in a unique character. The whiskey must also be produced from one single distillery and you won't come across this style of whiskey any where else around the world as it's exclusively made on Ireland.
Inspired by the original Yellow Spot Whiskey and last bottled in the 1950's by the Mitchell & son grocers in Dublin and is the rare taste of a Single Pot Still Irish whiskey with the yellow spot being guaranteed 12 years old and matured in a combination of ex-Bourbon barrels, Sherry butts and Malaga wine casks. Now triple distilled at the Midleton distillery and along with the Green Spot and soon to be released red spot, pot still Whiskey is finding new fans.
Single Pot Still Irish whisky matured in a both bourbon and sherry casks for around ten years, before being transferred into Bodega-Lustau-seasoned sherry butts for a final year.
Redbreast Lustau Edition pays homage to its Irish origins while highlighting the brand’s ties to Spain’s legendary sherry producer, Bodegas Lustau in Jerez.
Though prior editions of Redbreast have also been aged in former sherry casks, this blend was crafted with the goal of putting flavors imparted from Oloroso sherry at the forefront of the palate.

The Method and Madness range is on ongoing series of releases of small batch and experimental whiskies from the Midleton distillery in Cork, Ireland. This has been finished in Hungarian Virgin oak from the Carpathian mountains for 11 months after initial ageing in first fill and refill American oak. A first for single Irish Pot Still in such casks.
