1981 Rioja Reserva Castillo De Sajazarra (Bottle - 1/75cl)
This is a reserve red wine made almost entirely from Tempranillo grapes.
Beginning with very ripe grapes from the low-production vineyards. Between 10% and 20% of the malolactic fermentation is carried out in new French oak barrels with regular stirrings. It stays for 24 months if American and French oak barrels and ends by staying a final 3 months in French oak casks. It finally stays for a minimum of 12 months in bottles before its sale. The taste of oak remains in the background, well blended with the fruit. Complex and elegant.
