Its name derives from the Gaelic for a ‘meeting place’ of sheep and cattle drovers. So remote is it, that in 1994 it was officially recorded as the coldest inhabited place in Scotland for that year. No other distillery may use the water from Lochan an Doire Uaine, (Gaelic for "Loch of the green thicket") which lies at 2,000 feet in the Drumochter Hills; neither may they enjoy Dalwhinnie's™ unique combination of a clean, accessible, malty-sweet taste leading in to a smooth and smoky Highland warmth. Dalwhinnie distillery is situated between the gentle, grassy style of the Lowlands and the austere, firm body of Speyside which begins some 25 miles to the north. The style is that of the Highlands; a resilient marriage of gentleness and spirit. Each Distillers Edition expression undergoes a second (or ‘double’) maturation in casks that have previously held a fortified wine. Lovers of Dalwhinnie will appreciate the way the fragrance of Oloroso sherry overlays, but does not mask, the heather honey distillery notes. Appearance: Pale Amber Nose:Fresh sherry embraces the maltier, more honeyed aspects of Dalwhinnie. Peaty and surprisingly, still heathery. Spicy yet grapy. Body: Light to medium. Palate: A big, spicy buzz followed by an impressive build up of very clear, well defined malt. After a quick burst of sweetness, a rich, grape effect moves in towards the middle. Finish: Lots of oak. Very, very dry with vanilla dominating.

In Bond storage is facilitated at Octavian in Wiltshire, the U.K's premier wine storage facility. The conditions at this old munitions base, 100 metres below ground are unrivalled, offering temperature control, In Bond facility and full replacement value insurance. The wines are stored under each client's individual "Protection Plus" account number, fully labelled and can only be released or moved with his or her written instructions. No right of lien can be exercised over wines held on each client's behalf. Client's stock can be inspected, by arrangement, at any time excluding November & December.
