The 2014 M3 Chardonnay has a beautifully complex nose showing lemon, apple and white peach along with biscuit notes. The palate displays trademark M3 elegance and restraint with an extra dimension of creaminess through the finish.
Shaw and Smith began in 1989, when cousins Martin Shaw and Michael and Matthew Hill Smith decided to realise a long held dream to make wine together. They believe that environmental practises "make sense", and follow four main guidelines: 1. Repect the soil, 2. Cut water use, 3. Recycle, 4. Cut energy use. Shaw and Smith has two vineyards. The first is the M3 vineyard planted in 1994, consists of 42 hectares of Chardonnay and Sauvignon Blanc vines. The second is the Balhannah vineyard. Planted in 1999 this vineyard holds 46 hectares of Shiraz, Pinot Noir, Sauvignon Blanc and Rielsing vines. Their vision is: "To make exciting, refined wines exclusively from the Adelaide Hills that rank amongst Australia's best".
Largely ex the Lenswood vineyard, handpicked, chilled overnight; whole bunch pressed, wild yeast fermented in new and used French barriques; nine months maturation. A seamless fusion of white peach, biscuity oak and fresh acidity..
The 2014 Chardonnay M3 Vineyard opens with apricot, melon and pink grapefruit notes with a buttered toast and cedar laced undercurrent. The medium-bodied palate delivers plenty of expressive fruit with a lovely silken texture, finishing with linering savory notes.

The conditions at this old munitions base, 100 metres below ground are unrivalled, offering temperature control, In Bond facility and full replacement value insurance. The wines are stored under each client's individual "Protection Plus" account number, fully labelled and can only be released or moved with his or her written instructions. No right of lien can be exercised over wines held on each client's behalf. Client's stock can be inspected, by arrangement, at any time excluding November & December.
