Wild Ferment is a winemaking endeavour by Gaia which involves the use of yeasts present on the skins of grapes for fermentation, followed by the use of oak and acacia barrels to add complexity.
The Assyrtiko grape was chosen for this wine due to its delicious aromatic nature which which combines nicely with a period of maturation in barrels. Citrus is dominant on the nose, with refreshing acidity and bright minerality found on the palate, suggesting a wonderful relationship with seafood dishes. The Gaia winemakers suggest decanting the wine for a short period to allow its aromatic profile to emerge.
Gaia was first founded in 1994 by two Greek agriculturists with the aim to produce and demonstrate the potential of native varietals to wine enthusiasts worldwide.
They own two wineries, each in one of the finest Greek appellations, Nemea and Santorini and, between them now produces 350,000 bottles annually while maintaining fantastic quality!

As a rough guide most standard (75CL) single bottles weigh 2KG and a case (12 x 75CL bottles) weighs 24KG.
In Bond storage is facilitated at Octavian in Wiltshire, the U.K's premier wine storage facility. The conditions at this old munitions base, 100 metres below ground are unrivalled, offering temperature control, In Bond facility and full replacement value insurance. The wines are stored under each client's individual "Protection Plus" account number, fully labelled and can only be released or moved with his or her written instructions. No right of lien can be exercised over wines held on each client's behalf. Client's stock can be inspected, by arrangement, at any time excluding November & December.
