Dom Perignon gets its name from the Benedictine Monk, who in 1668 became the cellar master at Benedictine abbey of Hautvillers, in Marne, Champagne. During his time at the abbey, the vineyards thrived, and he made it his ambition to create - in his own words "the best wine in the world".
This bottle is another limited edition produced by Dom Perignon. Combining the ever-impressive bottle of champagne with an unusual luminous label. While technically not the first, so called 'prestige cuvee', Moet & Chandon's Dom Perignon is certainly the first to be widely available and created a trend followed by many others! Dom Perignon is created from the ripest grapes from the finest plots and, if kept well, those with enough patience can see it develop and improve over decades.
To make a Champagne so consistently fine as Dom Perignon is, in considerable volume is quite remarkable, a tribute to the skill and developement of the ultra famous Grande Marque Moet & Chandon. We at Nickolls & Perks have been fortunate enough to study the wines in depth, tasting examples back to the 1960's, I have never been disappointed. The wines are indestructable remaining fresh for decades. This is undeniably one of the world's finest wines.
As always, the 2003 Dom Pérignon has a lot to say. Bold, powerful and intensely phenolic in feel, the 2003 packs serious energy to match its explosive personality. The combined effects of a spring frost that decimated yields and a unrelentingly hot summer combined to produce one of the most powerful young Dom Pérignons I have ever tasted. The heavy presence of Pinot (62%) is felt in the wine's volume and breadth, making it one of the most vinous Dom Pérignons in recent memory. Given its structural depth, I imagine the 2003 will drink well for many, many years. Interestingly Chef de Caves Richard Geoffroy adds that the 2003 was lower in sugars than the 2002, but richer in phenolics.
Disgorged Jun 2010, scheduled for release early 2012. I had tasted a bottle that had just been disgorged a couple of weeks earlier and this second example seemed to have a much more persistent finish. Very much part of the Dom P family with its reductive, smoky nose with tight lemony fruit and a hint of citrus peel. Beautifully balanced - perhaps not quite as intense as the marvellous 2002 but there is no hint of its being a heatwave wine and it still has lots of unfurling to do. Ramrod straight in structure. Bit of a peacock's tail on the finish. Thoroughly satisfying.

In Bond storage is facilitated at Octavian in Wiltshire, the U.K's premier wine storage facility. The conditions at this old munitions base, 100 metres below ground are unrivalled, offering temperature control, In Bond facility and full replacement value insurance. The wines are stored under each client's individual "Protection Plus" account number, fully labelled and can only be released or moved with his or her written instructions. No right of lien can be exercised over wines held on each client's behalf. Client's stock can be inspected, by arrangement, at any time excluding November & December.
