A collaboration between James Bond's ongoing relationship with Bollinger champagne, to create the limited edition 007 Spectre bottling. The entire harvest from the 2009 vintage has been used for this release, made up of 68% Pinot Noir (39% Aÿ and 29% Verzenay) and 32% chardonnay (16% Mesnil-sur-Oger, 8% Avize and 8% Cramant). This champagne has a refined complexity, the palate is lively with plenty of fruits and orange peel on the finish. 

Information About Bollinger

The House of Bollinger was founded in the village of Ay in the Vallee de La Marne in 1829. This is one of the key centres of excellence in Champagne production, with 100% Grands Crus Vineyards surrounding the property.

Jacques Bollinger took over the family firm in 1918 from his father George, it was Jacques' marriage to Emily Law de Lauriston Bourbers known as "Lilly" which pushed the Bollinger brand onto new heights as she was a great ambassador, travelling the world tirelessly to promote the great wines.  She famously said...

"I drink it when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company I consider it obligatory. I trifle with it if I’m not hungry and drink it when I am. Otherwise, I never touch it..unless I’m thirsty."

L'assemblage:
 
- Grands crus: Sourced exclusively from Grands crus, the grapes selected are taken from the "cuvée" (1st pressing) to keep only the best juice
- Blend: 68% Pinot Noir and 32% Chardonnay from 5 crus:
Pinot Noir, Aÿ 39% and Verzenay 29%
Chardonnay, Mesnil-sur-Oger 16%, Avize 8% and Cramant 8%
- Oak barrels: produced in small old oak barrels so as not to give the wines either the taste of wood or tannins
- Fermentation: After bottling, the second fermentation and slow maturation in the cellars occur under natural cork to preserve the freshness of the wines while protecting them against oxidation
- Dosage:  moderate, 7g/l
 
Producer tasting note:
 
To the eye:  deep golden colour, which demonstrates the wine’s maturity as well as Bollinger’s winemaking methods. 
On the nose: the vintage boasts a refined complexity, the expression of the Grands crus and terroirs. White flowers, citrus fruit, delicately woody stewed pear with hints of vanilla, toasted aromas, hazelnut & breadcrumbs.
In the mouth: the wine shows a good maturity yet remains quite brisk and lively. It moves through stewed fruit, mirabelle plum, quince paste and honey with a finish that reminds us of bitter orange.

In Bond storage is facilitated at Octavian in Wiltshire, the U.K's premier wine storage facility. The conditions at this old munitions base, 100 metres below ground are unrivalled, offering temperature control, In Bond facility and full replacement value insurance. The wines are stored under each client's individual "Protection Plus" account number, fully labelled and can only be released or moved with his or her written instructions. No right of lien can be exercised over wines held on each client's behalf. Client's stock can be inspected, by arrangement, at any time excluding November & December.
