Coeur de Cuvee is the most exclusive wine produced by Vilmart & Co, created from old vines averaging 55 years. The grape blend is 80% Chardonnay and 20% Pinot Noir, matured for ten months in oak before bottling. There is no malolactic fermenation in any of Vilmart's wines, preserving the fresh fruit character. Compared to the Grand Cellier d'Or, this is a much richer and more intense Champagne.
This wine will likely have hit peak maturity now, and while there is no rush, there is no need to wait.
It is in the heart of the Montagne de Reims that Champagne Vilmart established their vineyard in the 1890s, a few miles south of Reims, in the small village of Rilly la Montagne.
Vilmart owns and organically works 11 hectares of prime Premier Cru vineyards in and around the village of Rilly. The vineyards are planted with 60% Chardonnay and 40% Pinot Noir. Yields and working practises are strictly controlled. The terroir is composed of 35-year-old parcels, some are older than 50 years which are exclusively used to produce the wine "Coeur de Cuvée".

Hint of gold and vibrant fizz, Bready nose with a hint of blueberrys, touch of oak and tree sap, a full youthful palate with good breadth of green orchard fruit, expansive and tenacious. After a few minutes in the glass it starts to blossom. A complex, honeyed wine, with lemon even lime and earthy notes and a hint of lavender. In Bond storage is facilitated at Octavian in Wiltshire, the U.K's premier wine storage facility. The conditions at this old munitions base, 100 metres below ground are unrivalled, offering temperature control, In Bond facility and full replacement value insurance. The wines are stored under each client's individual "Protection Plus" account number, fully labelled and can only be released or moved with his or her written instructions. No right of lien can be exercised over wines held on each client's behalf. Client's stock can be inspected, by arrangement, at any time excluding November & December.
