The 2007 is a gorgeous Pinot-focused blend of 70% Pinot Noir and 30% Chardonnay: 91% of the fruit is from Grand Cru vineyards (with the remainder from Premier Crus) – the Pinot is predominantly from Ay and Verzenay, and the Chardonnay from Avize, Cramant and Oger. Fermentation takes place in 100% small old oak barrels, aged for 9 years on its lees en magnum and still riddled by hand….no expense is spared!

For me that choice is however quite logical since the Bollinger house style is much better suited to austere vintages than for fruit bombs. Here we have a classic and perfectly balanced Bollinger with deep layers and beautiful crisp apple acidity. Gorgeous balance between the dark and light as a perfect Ying and Yang marriage. Layers of dry cocoa, hazelnut fudge, dried apricots and juicy red apples dominate over a beautiful hint of forest aromas based on sous bois and mushrooms in the background. In Bond storage is facilitated at Octavian in Wiltshire, the U.K's premier wine storage facility. The conditions at this old munitions base, 100 metres below ground are unrivalled, offering temperature control, In Bond facility and full replacement value insurance. The wines are stored under each client's individual "Protection Plus" account number, fully labelled and can only be released or moved with his or her written instructions. No right of lien can be exercised over wines held on each client's behalf. Client's stock can be inspected, by arrangement, at any time excluding November & December.
