The yield for this wine is controlled by de-budding and green harvest to produce a fine and expressive wine. The wine is aged in oak barrels (1/3 are new) for 15 months. A very light filtration is made before bottling so a light sediment may deposit. Made from 100% Pinot Noir, this wine is very representative of Burgundy; all finesse and elegance, with aromatic red fruits and a silky palate. Rully is classified Challonais but it is ajacent to Santenay, the most southern Burgundy commune.
Domaine Jaeger-Defaix is situated in Rully, in the South of Burgundy. The current owners have a viticultural tradition, wine growers stemming back to the 16th century. Henri Niepce, the great-grandfather of current estate manager Helene Jaeger-Defaix, is perhaps the greatest figure in Rully history, contributing enormously in the 1930's to obtain the AOC (appellation d'origine controlee) and then to build its fame. The domaine now manages Rully 1er Cru Mont-Palais, Rully 1er Cru Les Cloux, Rully 1er Cru Rabource for the whites and Rully 1er cru Preaux and Rully 1er Cru Clos du Chapitre for the reds.

In Bond storage is facilitated at Octavian in Wiltshire, the U.K's premier wine storage facility. The conditions at this old munitions base, 100 metres below ground are unrivalled, offering temperature control, In Bond facility and full replacement value insurance. The wines are stored under each client's individual "Protection Plus" account number, fully labelled and can only be released or moved with his or her written instructions. No right of lien can be exercised over wines held on each client's behalf. Client's stock can be inspected, by arrangement, at any time excluding November & December.
