Another great entry level Chablis from Bernard Defaix, there is a little more structure than the easy going 2011, it will probably keep a little longer and yield a little more of everything.

Information About Bernard Defaix

These are classic Chablis wines with admirable minerality and finesse. Bernard Defaix, fourth generation of a family of wine-growers, started this domaine in 1959 with 2 hectares. At about this time, new techniques for protecting vineyards from spring frosts were discovered. Over the years, Bernard and his wife Monique have acquired new land. Their efforts duly enriched the domaine which is now regarded as one of the finest in the Chablis Region. In 2009 Domaine Bernard Defaix was officially certified organic, a further move towards wine-making in the tradition of bygone generations. True to family tradition, the responsibilities for the running of the domaine has now passed to Bernard's two sons, Sylvain and Didier.

Here there is better Chablis character as well as a bit more depth to the fresh and cool aromas of green fruit, sea breeze and iodine. There is a seductive texture to the rich, round and openly generous medium-bodied flavors that possess a saline taste on the delicious finish. This should also drink well immediately but benefit from a few years of cellar time.

Didier Defaix describes 2012 as a "difficult vintage that in the end was a completely unexpected surprise. The early season saw a huge amount of rain with a poor flowering. And then by dramatic contrast the late season was very hot and dry. During the wetter portion of the growing season we did quite a bit of leaf thinning to promote better aeration so as to limit the incipient mildew that was threatening. This was an absolutely brilliant strategy except for three days in August that were so hot that the fruit didn't have any shade and thus in that very short window of time we lost fully 25% of the crop to sunburn! There was a light rain just before the harvest that was perfect as it allowed the vines just enough water to galvanize the final push to perfect ripening. We began picking on the 24th of September and while yields were on the low side, the fruit was both clean and ripe. I really liked the balance between sugars, acidities and phenolic maturities. As to the wines, they are quite generous with round and fleshy mid-palates that should allow them to be enjoyed young yet age reasonably well too. They were a bit strict at the beginning so we did some limited lees stirring, which is something that we normally do not do. Overall, 2012 is a good to very good vintage that should be popular with consumers."

The 2012 Chablis has a well-defined bouquet with tropical fruit (guava and pineapple) gently unfolding in the glass. The palate is medium-bodied with pear-drop and nectarine on the entry. There is modest weight in the mouth, though it needs more tension on the finish. This is a generous Chablis for the vintage, generous and harmonious. Drink now-2018.

Pale, platinum. The Nose offers floral with a hint of pear and apple and mint. The palate is lean, square, some tertiary notes and minerality on the finish, carries well, typical Chablis with lifted acidity and tension on the finish.
