Crafted from grapes hand harvested in the Secher Premier Cru, southeast of the village of Chablis. The wine is aged in French oak, weathered for three years in order to not overwhelm this fresh flavoured wine with wood, but still adding richness. Aromas of citrus and blossoms fill the nose, with some briny minerality on the palate. Now this Chablis has a few years under its belt, notes of honey should become apparent.

The 2012 Chablis Sécher is deep, powerful and earthy, with an implosive core of minerality that dominates over the fruit. Some slightly angular contours remain in a powerful, compact Chablis that could use another year in bottle to come together a little more fully. Hazelnuts, spices and dried flowers add the final nuances of complexity.

In Bond storage is facilitated at Octavian in Wiltshire, the U.K's premier wine storage facility. The conditions at this old munitions base, 100 metres below ground are unrivalled, offering temperature control, In Bond facility and full replacement value insurance. The wines are stored under each client's individual "Protection Plus" account number, fully labelled and can only be released or moved with his or her written instructions. No right of lien can be exercised over wines held on each client's behalf. Client's stock can be inspected, by arrangement, at any time excluding November & December.
