The concept for Cape 312 came from the Western Cape winemaking region that spans 312 miles wide. The range includes Cape Red, Cape White, Pinotage and Chenin Blanc.

Pays de Vaucluse is the local wine of the southern Rhone valley – the vineyards surrounding the appellations of villages such as Gigondas, Cairanne and Séguret produce Pays de Vaucluse. Of course neither the terroir nor aspect here is the same as appellation contrôlée vineyards, the yields are higher, but the ample, full fruit they yield are indelibly stamped Rhône.

The grapes come from a single vineyard in the Riebeek Valley in Paarl, where there is a mix of both old and younger vines. The younger vines are trained by vertical shoot positioning to give shade, wheras the older vines are exposed to increase ripeness and add weight to the blend. The must was cool fermented at 10-12 degrees celcius with fruit from the young vines fermented with an aromatic yeast. The wine remained in stainless steel tank for two months before being bottled under Stelvin closure to retain its fresh, clean character.
The Vermentino grapes come from selected vineyards in the Picpoul de Pinet region. Vermentino is valued for its ability to produce aromatic, flavoursome, fresh whites of excellent quality in the sunny climate of the South of France. Soils are clay and limestone, encouraging good concentration and structure in the wine. The vines are low trained with good canopy management to increase ripeness.
The Bernard Defaix vines in the appellation of Chablis spread over 12 hectares, situated at the heart of the Chablisian vineyard. This village wine is aged in stainless steel tanks so as to respect the typicity of the appellation, characterised by freshness, power and tenacity. Minerality is so evident in the cool climate Chardonnay wines, and the 2010 vintage is just as obvious as it gets.
